You can use the stalks to make a lovely creamy soup: gently fry them with an onion, a clove of garlic and a dash of extra-virgin olive oil. When they’re soft, add some water and cook. When they’re ready, blend to create a creamy texture. If you like, you can add some single cream at the end.
