Should I cook fresh and frozen spinach the same way?

A bunch of fresh spinach gets dramatically smaller when cooked. So although you might think it won’t fit in the frying pan, the water in it soon evaporates and it shrinks to a fraction of its former volume.

If you haven’t got any fresh spinach, you can always use frozen spinach instead. Just bear in mind that for every 1 kg of fresh spinach, you’ll need less than half the weight in frozen spinach.
