Five dressings with aromatic olive oils for your spring salads

Do you like salads but want to spruce them up a bit? Are you fed up with the same old recipes? If so, read on. These five salad dressings with aromatic olive oil are just the thing.

1 – Let’s start with something easy: a classic mozzarella and tomato Caprese salad. We recommend making an aromatic dressing using extra-virgin olive oil with basil, a pinch of salt and black pepper and, go on, pine nuts. Half-vinaigrette, half-pesto, this dressing will take your Caprese salad to the next level. Make the most of the fresh tomatoes that are just coming into season!

2 – What dressing would you choose for spinach and tuna salad? How about one with tomatoes? Simply add two ripe tomatoes to the spinach and tuna, followed by a spoonful of mustard and a dash of aromatic olive oil with fried garlic. Irresistible!

3 – A dazzling dressing for those with exquisite tastes. Walnuts, a dash of white wine vinegar, a pinch of black pepper and some aromatic olive oil with lemon rind. It works wonders with fried squid on a bed of mixed leaves. Light, simple and refined. What more could you ask for?

4 – Do dressings go with pasta salads too? It depends. If you talking penne, anchovies in vinegar and orange, then yes. How about an aromatic olive oil with black olives mixed with thyme, black pepper and some of the vinegar from the anchovies?

5 – Bittersweet Asian delights. Mango and aromatic olive oil with soya and ginger would be ideal for adding some Asian flavours to any salad. Throw in some extra-virgin olive oil, a red onion, a dash of mango juice, some rice vinegar and enjoy!
