What does extra-virgin olive oil really mean?

We all know that extra-virgin olive oil, aka EVOO, is the very best olive oil on the market, but not many people know exactly what that means.

Well, this unrefined oil is made from top olives picked at their peak without the use of any chemical products.

It has a distinctive flavour and never has more than 1% oleic acid, whereas virgin olive oil has a higher concentration.

In addition to its intense flavour, it is also packed with vitamins and minerals, since the olives retain all their goodness.

A joy for all the senses, extra-virgin olive oil adds a magical touch to any dish.
