The term procrastinate (‘the avoidance of doing a task that needs to be accomplished’) could well have been invented by someone trying to decide what to put in their lunchbox for the following day. It can certainly be a bit of a chore. Especially when the other options include curling up on the sofa, sending Mum a WhatsApp message, stroking the cat, checking your toenails or pondering the ceiling rose. However, all this could change once you’ve discovered the wonders of fresh pasta, a natural delight you can whip up in five minutes while listening to your favourite playlist.
Simply boil your pasta of choice with some eggs and store in the fridge as the basis for the following few days’ lunchboxes. Once you’ve got this blank canvas to work with, you can fill in the rest of the picture with your imagination and creativity.
Here’s an idea to get you going and to inspire your own variations to make you the envy of the office. Start with the pasta and a hardboiled egg cut into pieces. Next, add a tin of tuna, some chopped olives, boiled ham and some walnuts (or any other nuts). To bind it all together, make a quick-and-easy and very tasty yogurt sauce: all you need is some yogurt, a little olive oil, a dash of lemon and a pinch of oregano. Healthy and delicious!
