This cold pasta salad is not only irresistibly delicious and nutritious, but it’s also a quick, easy and fun dish to make with kids. First of all you need to cook some good-quality penne following the instructions on the packet (put the kids in charge of keeping their eye on the timer).
Next, cut some chicken breast into cubes and cook in a frying pan with a little extra-virgin olive oil (don’t overdo it!). Add some grated carrot—don’t worry if the kids eat as much raw carrot as goes into the salad, that’s the whole idea!—and a little feta cheese (a small amount will do as it has a strong flavor). Now a handful of black olives and you’re good to go!
Simply leave to cool, then dress with Modena balsamic vinegar and top off with some chopped walnuts.
