It’s time to say goodbye to breakfasts of buttered toast, marmalade, cereal and biscuits. When the first (and key) meal of the day starts to get boring, give it a fresh twist by trying out some new original, healthy options to start the day with a spring in your step. Here are some ideas for simple and original breakfasts:

Coffee or tea… with walnut drink!

Whether you can’t drink cow’s milk or you just fancy a change, walnut drink is a wonderful addition to any breakfast. A glass of this delicious, subtly flavoured drink is equivalent to five walnuts, the recommended daily amount of this highly nutritious nut. By adding walnut drink to your breakfast table, you’re adding carbohydrates, proteins, iron, healthy fats and minerals such as sodium and potassium to your diet.

Yummy avocado!

It’s spring and green food is suddenly all the rage. The incredibly versatile avocado is a fantastic way to get healthy fats into your diet. How about some wholemeal bread with some slices of avocado, your favourite cheese, olive oil and a sprinkling of sesame seeds on top? Irresistible!

Smoothies

Spring brings with it a whole bunch of seasonal fruit just calling out to be eaten. To make the most of all these wonderful nutrients, try making an energy-packed breakfast smoothie. Strawberries, cherries, medlars, plums, apricots, blueberries… Whip up a super smoothie with walnut drink and start the day as you mean to go on!

Healthy homemade pastries

Nifty cooks will love getting into the world of homemade cakes and pastries without using any eggs, sugar or refined flour. If you’re already a whiz at making cakes (from carrot cake to brownies and cheesecakes), now is the time to start exploring alternative versions. You can start by swapping wheat flour for gram flour, cow’s milk for walnut drink, and sugar for handy dates. There are lots of recipes out there, so you’re sure to find one that works for you.

Long live breakfast bowls!

Now is the time to fill your breakfast bowl with your favourite delicious, healthy springtime fruit and let your imagination run wild. You can also add nuts, seeds, yogurt, wholegrain cereal… or walnut drink! And before you know it you’ll have a great big bowl of healthy goodness that’s as much a feast for the eyes as the stomach!

Extra-virgin olive oil, always

Another great idea for breathing new life into breakfast is going back to basics, with some proper wholemeal bread (its slow-burning carbohydrates will keep hunger pangs at bay for hours) drizzled with a good dash of extra-virgin olive oil, a pinch of salt and, if you like, some slices of seasonal tomatoes. Simple, tasty and 100% healthy!
