Three 10-minute dinners

It’s almost dinner time and the table’s still bare… but don’t worry, we’re here to help! All you need is that kitchen cupboard you keep well stocked for exactly these kinds of situations and the ability to think on your feet. Ready?

Creamed spinach

Gently fry some onion in extra-virgin olive oil. Add some finely chopped garlic, a handful of pine nuts and, a minute later, some tinned spinach. Add salt and pepper and stir well. Add some raisins and evaporated milk. Add more salt and pepper as necessary. Pour the creamed spinach into an ovenproof dish, sprinkle some grated cheese on top and bake at 200 ºC.

Vegetable fajitas

A DIY dinner at which everyone can make their own favourite fajita. Wash and cut up some green, red and yellow pepper (as available), onion, radishes and any other vegetables you have to hand, either raw or lightly fried, such as wild asparagus. Put out some slices of fresh tomato, salad leaves, maize, turkey or ham, and cream cheese. Warm up the tortillas and let people make their fajitas on a base of cream cheese, a selection of vegetables and a dash of sauce, balsamic glaze or dressing. Quick, easy and fun for the whole family.

Chicken and avocado sandwich

Fry some chicken with whatever herbs and spices you have to hand. Set aside. Cut some slices of fresh tomato and avocado and mix with some lettuce or other salad leaves. Use white or brown bread (toast if necessary) and mayonnaise: choose from any of these 10 highly original mayonnaise recipes, including yogurt, pear and hazelnut.
