Are you one of those people who always makes the same pasta salad? If you’d like to get a bit more creative, here are some fresh ideas for sprucing things up with a little touch of the sea, fresh fruit, dressings and herbs… Take a look and maybe you’ll come up with some combinations of your own.
Avocado and prawns
Throw together some cooked pasta, avocado, cooked and peeled prawns or king prawns, red onion and a little finely chopped fresh coriander. A simple recipe that balances delicate avocado against fresh onion and coriander. Top it off with a dash of Modena vinaigrette or a simple olive oil, pepper and lime dressing. Take care not to mash up the pieces of avocado as you mix the salad together. If you prefer, you can replace the cooked prawns with hot sautéed prawns.
Sun-dried tomato and mozzarella
A very Italian combination with a twist. Pasta, fresh mozzarella, black olives, sun-dried tomato and basil. You could use fresh tomato, but the sun-dried tomato packs a tasty punch. Some nut vinaigrette would be great to drizzle on top and bring out the whole Mediterranean character.
Melon and feta
We already saw what a great combination melon and feta cheese make in these summer recipes, and here we’ve designed a salad with a sweet side. Pasta, melon cubes, feta cubes, fresh spinach leaves and a handful of raisins. Refreshing and irresistible. Finish it off with some Modena balsamic glaze or olive oil and pepper.
