Who ever said you can’t make a 100% vegan carbonara sauce?
All you have to do is gently fry some tofu and chopped walnuts in a little olive oil, add some oat milk (or any other plant milk) and bring it to the boil. Add some salt and nutmeg, let it cool and give it a whiz in the blender. Delicious over pasta and vegetables!
