Avocado and Olive Salad

Ingredients
- A handful of leafy greens of your choice (arugula, spinach, lamb’s lettuce, or a mix)
- 2 avocados, ripe but firm
- ½ cucumber
- 1 spring onion
- 150 g cherry tomatoes
- 60 g Borges black pitted olives
- 50 ml Borges extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 80 g chopped walnuts

Step 1
Place the greens in a large salad bowl. Carefully add the avocados, sliced or diced. Add the thinly sliced cucumber, the julienned spring onion, the halved cherry tomatoes, and the olives.

Prepare the dressing by mixing the extra virgin olive oil with the lemon juice, salt, and pepper. Stir until slightly emulsified.

Pour the dressing over the salad and toss gently, without crushing the avocado.

Finish the salad by topping with the chopped walnuts and adding a little more extra virgin olive oil to enhance the flavor.
