Preheat the oven to 200º C top and bottom.
Baked chicken with a refreshing sauce
- 1 medium whole chicken cut into quarters
- 2 cloves of garlic
- 200 g Borges pitted green olives
- Zest from half a lemon
- A few basil leaves
- 200 g cherry tomatoes
- A splash of Borges extra virgin olive oil
- Salt and pepper
Step by step
Set the chicken in a baking pan with the sliced garlic underneath. Drizzle extra-virgin olive oil over the top.
In a bowl, mix the sliced olives with the lemon zest, basil, halved cherry tomatoes, salt and pepper. Spread the mixture around the chicken.
Bake in the oven for 35-45 minutes, until the chicken is fully browned. Halfway through cooking you can turn the chicken over or drizzle it with a little more extra virgin olive oil so that it doesn’t dry out.
