If there’s one ingredient we can always turn to in a crisis, it’s pasta. So here’s a quick and easy baked pasta dish.

Baked pasta with vegetables and prawns
Ingredients
- 400 g penne rigate
- 2 medium carrots
- 1 courgette
- 1 leek
- 150 g peeled frozen prawns
- A dash of Borges extra-virgin olive oil
- 80 g Parmesan cheese
- A pinch of curry powder (optional)
Step by step

Step 1
Boil the pasta in salted water following the indications on the packet until it’s cooked al dente.

Lightly fry the sliced carrots in a frying pan with a dash of hot olive oil for a few minutes. Add the sliced courgette and then the leek.

When the vegetables are done, add the fully defrosted prawns and then add salt and pepper to taste, plus a pinch of curry powder, if you like. Add the pasta to the frying pan and cook for a few more minutes.

Transfer the mixture to an oven tray, grate some Parmesan cheese on top and cook au gratin. Read to serve!
