Vegetables and egg breakfast tacos with tortillas

Ingredients

  • 250 g flour
  • 20 ml Borges extra-virgin olive oil
  • 100 ml warm water
  • Salt

For the filling

  • 1 onion
  • 2 cloves of garlic
  • 1 medium tomato
  • 4 eggs (1 per person)
  • 50 ml Borges Natura walnut drink
  • A dash of Borges extra-virgin olive oil
  • Salt and pepper to taste

Step by step

  1. Step 1

    To make the tortillas, mix all the ingredients together in a bowl. Pour some extra-virgin olive oil onto a flat surface and knead to make a soft, pliable dough.

  2. Step 2

    Divide the dough into as many pieces as you want tortillas and roll them out into thin circles.

  3. Step 3

    Pour a little extra-virgin olive oil into a small frying pan. When it is really hot, add a raw rolled-out tortilla and cook on both sides. Repeat as many times as necessary.

  4. Step 4

    For the filling, gently fry the onion, garlic and finely chopped tomato in a frying pan with extra-virgin olive oil.

  5. Step 5

    Beat the eggs, walnut drink, salt and pepper together in a bowl. Add to the frying pan and cook until the eggs are creamy but firm.

  6. Step 6

    Arrange the filling on the tortillas and enjoy your healthy and highly original breakfast to start the day firing on all cylinders.

    * If you have any cheese to hand, you can grate some on top and cook in the au gratin oven for a few minutes.
