Chicken curry


  • ½ onion
  • A dash of Borges extra-virgin olive oil
  • 1 tomato
  • 4 chicken breasts
  • 1 tbsp curry powder
  • 100 ml coconut milk
  • 100 ml water
  • Salt

Step by step

  1. Step 1

    Gently fry the finely chopped onion in extra-virgin olive oil until golden brown. Add the grated tomato and salt.

  2. Step 2

    Cut the chicken breasts into cubes and add to the sauce. Cook for a few minutes until the chicken turns golden brown.

  3. Step 3

    Add the curry power, coconut milk, water and a pinch of salt. Cook over a low heat for another 20 to 30 minutes to reduce the sauce. 

    Serve with basmati rice.
