Vegan Strawberry Ice Cream

Ingredients

  • 150 g whole grain spelt flour
  • 80 g ground almonds
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 100 g chilled butter
  • 50 ml Borges Natura almond milk
  • 80 g dark chocolate chips (70% cocoa)
  • 20 ml Borges extra light olive oil

Step by step

  1. Step 1

    Mix the spelt flour with the ground almonds, the baking powder and the sugar. 

  2. Step 2

    Cut the butter into cubes and add it to the bowl (if it is too stiff, you can put it in the microwave for a few seconds). Add the extra-virgin olive oil and the almond milk and begin mixing the dough with your hands. Mix in the chocolate chips and let the dough rest for 20 minutes. 

  3. Step 3

    Roll the dough into balls, flatten them into cookie shapes and bake them at 180 C for 20 minutes. Transfer the cookies to a wire rack to cool.
