Classic sugar cookies


  • 2 eggs
  • ⅔ cup Borges extra light olive oil
  • 1 cup sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • ½ cup chocolate chips (optional)

Step by step

  1. Step 1

    Preheat the oven to 185 ºC. Line a baking sheet with parchment paper. 

  2. Step 2

    In a bowl, combine the eggs, olive oil and sugar using a hand mixer until it forms a smooth light-colored paste. 

  3. Step 3

    Add the flour, baking powder and salt, and stir until combined. Add the chocolate chips if you’re using them. Roll the dough into a ball and chill it in the refrigerator for 30 minutes. 

  4. Step 4

    Take out the dough and divide it into small balls. Set them on the baking sheet, leaving two inches between them to give the cookies room to spread. 

  5. Step 5

    Bake them for about 8 minutes, until golden brown. Let them cool for 2 minutes before transferring them to a wire rack.
