Creamy Pumpkin Pasta
Ingredients
- 400 g Borges spaghetti
- 2 cloves of garlic
- 300 g pumpkin puree
- 150 ml half and half
- 50 g grated Parmesan cheese
- Salt and pepper
- 80 g chopped almonds
- A splash of Borges extra virgin olive oil
- A few sprigs of fresh parsley
Step by step

Step 1
Cook the spaghetti following the instructions on the package.

In a deep frying pan with a drizzle of extra virgin olive oil, brown the chopped garlic for a few minutes over medium heat.

Add the pumpkin purée, mix well and pour in the half and half. Stir until you have a smooth, creamy sauce. If the sauce is too thick, you can add a pinch of the water used to cook the pasta or the pumpkin. Add the Parmesan cheese, salt and pepper and stir.

Add the cooked spaghetti to the pan with the pumpkin sauce, stir and cook for a few more minutes to blend the flavors together.

Serve topped with a sprinkle of Parmesan cheese as a garnish, along with the almonds and a few sprigs of fresh parsley.
