Sweet potato salad served in a dish


  • 1 medium sweet potato
  • 250 g baby spinach
  • 20 cherry tomatoes
  • 200 g cooked chickpeas
  • 80 g crushed almonds
  • 80 ml Borges extra-virgin olive oil
  • 1 tablespoon honey
  • Salt and pepper

Step by step

  1. Step 1

    Roast the sweet potato in the oven at 200 ºC for about 30 minutes. Cut it into small squares, making sure it doesn’t fall apart.

  2. Step 2

    Place the spinach, sweet potato, halved cherry tomatoes, chickpeas, and crushed almonds in a bowl.

  3. Step 3

    For the dressing, mix the extra-virgin olive oil with the honey and salt and pepper, and pour it over the salad.
