Gazpacho may be served with some chunks of bread and/or with small pieces of cucumber, tomato and boiled egg.
- 2-3 tomatoes (ripe)
- 1 green pepper
- 1 garlic clove
- 1/2 cucumber
- 1 dl. Borges Extra Virgin Olive Oil
- 4 spoonfuls of Borges Modena balsamic Vinegar
- 1 slice of bread
- * 1 egg
- Fine salt
Step by step
In a blender or food processor, put two blanched and skinned tomatoes, chopped cucumber, green pepper, garlic and bread soaked in water. Blend until smooth, then and add salt, vinegar and olive oil to taste. Pass the mixture through a fine colander and put it in a soup tureen for one hour until cold.
