Avocado Toast

Ingredients
- 1 ripe avocado
- ½ of a lime
- 1 tablespoon Borges First HARVEST extra virgin olive oil
- 2 slices of rye or whole wheat seeded bread
- 30 g feta
- 1 tablespoon honey
- A pinch of chili flakes or harissa powder (to taste)
- A handful of shelled, chopped pistachios
- Salt and pepper
- A few fresh mint leaves
Step by step

Step 1
Mash the avocado in a bowl along with the lime juice, salt, pepper, and a tablespoon of olive oil. Stir well until the mixture is creamy.

Toast the bread. Spread the avocado on top and add the crumbled feta.

In a small bowl, mix the honey with the chili flakes or harissa (adjust the amount based on your spice tolerance).

Drizzle a little spicy honey over the toast, sprinkle with the chopped pistachios and top with a few fresh mint leaves.
