Ingredients

  • 4 salmon fillets with skin
  • 2 tablespoons miso paste (white or red, as you prefer)
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 clove of garlic
  • ½ lime or lemon
  • 2 tablespoons Borges extra virgin olive oil
  • A handful of sesame seeds
  • Thinly sliced chives or spring onions

Extra Virgin Olive Oil

Step by step

  1. Step 1

In a bowl, mix the miso paste, honey, soy sauce, ginger, grated garlic, lime or lemon juice, and a tablespoon of extra virgin olive oil to make a uniform marinade.

  2. Step 2

Set the salmon fillets in a dish and cover them with the marinade. Let them sit in the refrigerator for about 30 minutes so they absorb the flavors.

  3. Step 3

Preheat the oven to 200 ºC. Place the salmon on a baking sheet lined with parchment paper, skin side down, and brush with some more of the marinade.

  4. Step 4

Bake the salmon for 10-12 minutes, depending on the thickness, until it is still juicy inside and slightly browned on top. You can also end with 1-2 minutes under the broiler for a more golden finish.

  5. Step 5

Once you take the salmon out of the oven, drizzle it with the remaining tablespoon of extra virgin olive oil. Garnish with sesame seeds and sliced chives and serve with jasmine rice or stir-fried vegetables.
