Pasta with Crunchy Walnuts

Ingredients
- 360 g pasta (linguine or fusilli, for example)
- 3 tablespoons Borges extra virgin olive oil
- 1 clove of garlic
- 60 g Borges walnuts
- 1 tablespoon breadcrumbs
- 1 tablespoon lemon zest
- A few sprigs of fresh parsley
- Salt and pepper to taste
- 80 g grated Parmesan cheese
Step by step

Step 1
Cook the pasta in salted water following the instructions on the package. Set aside a cup of the cooking water and drain the pasta.

Heat two tablespoons of extra virgin olive oil in a pan. Add the minced garlic and chopped walnuts. Lightly toast until golden brown.

Add the breadcrumbs and lemon zest and sauté for another minute, stirring constantly.

Step 4
In the same pan, add the cooked pasta, a splash of the cooking water, and another tablespoon of extra virgin olive oil. Season with salt and pepper to taste and mix well.

Serve with a little chopped parsley on top and grated Parmesan cheese.
