Cold Pasta Salad
Ingredients
- 350 g fusilli
- 4 hard-boiled eggs
- 100 g cherry tomatoes
- 150 g smoked salmon
- 1 ripe avocado
- A few leaves of fresh basil
For the vinaigrette
- 80 ml Borges Extra Virgin Olive Oil
- 25 ml Borges Balsamic Vinegar of Modena
- 1 teaspoon Dijon mustard
- Salt and pepper

Cook the pasta following the instructions on the package. Chill in the refrigerator.

Cut the eggs into wedges, the tomatoes into halves, the salmon into strips, and the avocado into slices. Add all these ingredients to the pasta.

Prepare the vinaigrette by mixing all the ingredients fully with olive oil and vinegar. Pour it over the pasta and serve very cold, garnished with a few fresh basil leaves.
