  • 400 g (15 oz) penne
  • Half a curly endive
  • 200 g (7 oz) pickled anchovies
  • 2 oranges
  • 50 g (2 oz) walnuts
  • 50 g (2 oz) pitted black olives
  • Olive oil
  • Fresh thyme

Step by step

  1. Step 1

    Crush the black olives with the olive oil to make a paste. Next, add more olive oil to make an olive spread.
    Boil the penne in plenty of water and salt, following the instructions on the packet. When done, wash immediately with cold water and toss with the olive spread.
    Cut the oranges open and remove the skin, pith and the membrane between the segments. Put by.
    Crack the nuts. Wash the curly endive and then dry well. Make the salad by mixing the curly endive with the penne and olive spread and arrange the anchovies, orange segments and walnuts on top. Finish off by sprinkling some fresh thyme on top.
