Breakfast toast with boiled egg, tomato and mozzarella

Ingredients

  • 2 boiled eggs
  • 12 ripe cherry tomatoes
  • 100 g mozzarella (halved mozzarella balls work best)
  • A few basil leaves
  • 40 g (approx.) Borges walnuts
  • Some sesame seeds
  • A dash of Borges extra-virgin olive oil
  • A dash of Borges apple balsamic vinegar
  • Salt
  • 2 medium slices of brown toast (about 1 cm thick)

Step by step

  1. Step 1

    Cut the boiled eggs and cherry tomatoes into quarters and the mozzarella into small cubes (or use halved balls).

  2. Step 2

    Mix together in a bowl and add the chopped basil, chopped walnuts, sesame seeds, extra-virgin olive oil, apple vinegar and salt (and a teaspoonful of honey, if you like).

  3. Step 3

    Stir carefully to coat all the ingredients in olive oil without breaking them into smaller pieces.

  4. Step 4

    Toast the bread and, while still hot, arrange the ingredients on top, taking sure they don’t fall off. Bon appétit!
