Sweet potato fritters recipe served on a fryer style tray with sauce and olive oil

Ingredients

  • 3 sweet potatoes
  • 1 small onion
  • 60 g rice flour
  • 40 g grated mozzarella
  • 2 eggs
  • Black pepper
  • Salt
  • Borges extra-virgin olive oil

Step by step

  1. Step 1

    Grate the sweet potatoes (peeled or not) into a bowl. Chop the onion and add to the sweet potato.

  2. Step 2

    Next add the rice flour, mozzarella and beaten eggs. Mix together and add salt and pepper. Spoon the mixture into portions of the desired size.

  3. Step 3

    Heat two spoonfuls of extra-virgin olive oil in a frying pan. Fry the portions until they turn golden brown on both sides.

  4. Step 4

    Serve the fritters hot with your favourite sauce on the side.
