Sweet and Sour Chicken

Ingredients
- 500 g diced chicken breast
- 2 tablespoons Borges extra virgin olive oil
- 1 red pepper
- 1 green pepper
- 1 medium onion
- 100 g pineapple
For the sauce
- 3 tablespoons Borges white vinegar
- 3 tablespoons ketchup
- 2 tablespoons sugar or honey
- 1 tablespoon soy sauce
- 100 ml water
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
Step by step

Step 1
In a bowl, mix the white vinegar, ketchup, sugar or honey, soy sauce, and water. Set this mixture aside for the sauce.

Heat the extra virgin olive oil over medium-high heat in a large frying pan or wok. Add the chicken and sauté for 5-6 minutes until golden brown on the outside and almost cooked through. Remove and set aside.

In the same pan, add the diced onion and the julienned peppers. Sauté the vegetables for 3-4 minutes until they are slightly tender but still crunchy. Add the chicken back to the pan and then add in the diced pineapple. Pour in the sauce and mix well.

Add the cornstarch slurry and cook over medium heat for 2-3 minutes, stirring constantly, until the sauce thickens and coats all the ingredients.
