Tofu scramble


  • 200 g tofu
  • 1 small spring onion
  • 1 large carrot
  • ½ zucchini
  • 150 g mushrooms
  • 20 cherry tomatoes
  • ½ cup of vegetable broth
  • Salt and pepper
  • A pinch of curry powder
  • A splash of Borges extra virgin olive oil

Step by step

  1. Step 1

    Drain the tofu and blot it dry with a paper towel. 

  2. Step 2

    Chop the spring onion and sauté it in a pan with a drizzle of extra-virgin olive oil. Add the sliced carrot and cook for a few minutes. Then add the sliced zucchini and mushrooms. Add the cherry tomatoes, cut in half, and the salt and pepper. 

  3. Step 3

    Add the tofu, crumbled between your fingers. As it cooks, add a little vegetable broth to moisten the mixture. Add the curry powder. Serve it on toast.
