Easy and tasty cold pasta salad
Ingredients
- 350 g penne rigate
- 4 radishes
- 100 g feta cheese
- 150 g black olives
- 2 ripe tomatoes
- 50 g rocket
- A dash of Borges extra-virgin olive oil
For the vinaigrette:
- 150 ml of Borges extra-virgin olive oil
- ½ lemon
- ½ teaspoonful of mustard
- A pinch of oregano
Step by step

Step 1
Boil the pasta in salted water following the indications on the packet. Drizzle with a dash of extra-virgin olive oil and leave to cool.

Add the rocket, olives, cubed feta cheese and sliced radishes and tomatoes.

Mix the olive oil, lemon juice, mustard and oregano in a cup. Stir well and pour the vinaigrette over the salad. Add some salt and toss the pasta salad well to mix all the ingredients together.
