If there’s one ingredient we can always turn to in a crisis, it’s pasta. So here’s a quick and easy baked pasta dish.
Baked pasta with vegetables and prawns
- * 400 g penne rigate
- * 2 medium carrots
- * 1 courgette
- * 1 leek
- * 150 g peeled frozen prawns
- * A dash of Borges extra-virgin olive oil
- * 80 g Parmesan cheese
- * A pinch of curry powder (optional)
Step by step
Boil the pasta in salted water following the indications on the packet until it’s cooked al dente.
Lightly fry the sliced carrots in a frying pan with a dash of hot olive oil for a few minutes. Add the sliced courgette and then the leek.
When the vegetables are done, add the fully defrosted prawns and then add salt and pepper to taste, plus a pinch of curry powder, if you like. Add the pasta to the frying pan and cook for a few more minutes.
Transfer the mixture to an oven tray, grate some Parmesan cheese on top and cook au gratin. Read to serve!
