Borges - Baked pasta with vegetables and prawns

Ingredients

  • * 400 g penne rigate
  • * 2 medium carrots
  • * 1 courgette
  • * 1 leek
  • * 150 g peeled frozen prawns
  • * A dash of Borges extra-virgin olive oil
  • * 80 g Parmesan cheese
  • * A pinch of curry powder (optional)

Step by step

  1. Step 1

    If there’s one ingredient we can always turn to in a crisis, it’s pasta. So here’s a quick and easy baked pasta dish.

  2. Step 2

    Boil the pasta in salted water following the indications on the packet until it’s cooked al dente.

    Lightly fry the sliced carrots in a frying pan with a dash of hot olive oil for a few minutes. Add the sliced courgette and then the leek.

    When the vegetables are done, add the fully defrosted prawns and then add salt and pepper to taste, plus a pinch of curry powder, if you like. Add the pasta to the frying pan and cook for a few more minutes.

    Transfer the mixture to an oven tray, grate some Parmesan cheese on top and cook au gratin. Read to serve!
