Cold pasta salad recipe with Borges extra virgin olive oil

We’re all dreaming of the day we can enjoy a lovely fresh pasta salad in the open air, in our summer lunch box. Tick-tock, tick-tock.

Ingredients

  • 350 g penne rigate
  • 4 radishes
  • 100 g feta cheese
  • 150 g black olives
  • 2 ripe tomatoes
  • 50 g rocket
  • A dash of Borges extra-virgin olive oil

For the vinaigrette:

  • 150 ml of Borges extra-virgin olive oil
  • ½ lemon
  • ½ teaspoonful of mustard
  • A pinch of oregano

Step by step

  1. Step 1

    Boil the pasta in salted water following the indications on the packet. Drizzle with a dash of extra-virgin olive oil and leave to cool.

  2. Step 2

    Add the rocket, olives, cubed feta cheese and sliced radishes and tomatoes.

  3. Step 3

    Mix the olive oil, lemon juice, mustard and oregano in a cup. Stir well and pour the vinaigrette over the salad. Add some salt and toss the pasta salad well to mix all the ingredients together.
