Ingredients
- 250 g rice noodles
- 200 g peeled shrimp*
- 2 eggs
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 80 g bean sprouts
- 60 g roasted peanuts
- 30 ml Borges Classic olive oil
- Chili powder to taste (optional)
- *You can make Chicken Pad Thai following the same recipe: simply replace the shrimp with sliced chicken.
Step by step

Step 1
Cook the rice noodles according to the manufacturer’s instructions. Drain and set aside.

In a large skillet, heat the olive oil and sauté the shrimp for a few minutes. Remove and set aside.

In the same pan, add a little more olive oil if needed and cook the beaten eggs, stirring as though you were making scrambled eggs.

Add the noodles, both sauces, the sugar, and the shrimp. Stir to blend the flavors together.

Add the bean sprouts and chopped peanuts and sauté for a few more minutes.

Optionally, add a little chili powder for a touch of spice.
