Pumpkin pie


For the pie:

  • 300 g cooked pumpkin
  • 1 pie crust
  • 100 g sugar
  • 150 ml heavy cream
  • 150 ml Borges Natura walnut milk
  • 3 eggs
  • 20 g flour
  • 50 g butter
  • Borges extra light olive oil

For the frosting:

  • 250 g cream cheese
  • 50 g butter
  • 250 g powdered sugar
  • 2 tablespoons Borges Natura walnut milk

Step by step

  1. Step 1

    Set the pie crust in a greased pie pan and blind bake it at 180 °C for about 10-15 minutes until lightly browned.

  2. Step 2

    Beat the cooked pumpkin with the flour, the walnut milk and the cream, and heat it in a saucepan over medium-low heat. Gradually add the sugar and butter as you continue stirring. Add to this mixture olive oil. Set it aside to cool. 

  3. Step 3

    Add the eggs, beat everything together and pour the mixture into the pre-baked crust. Bake the pie in the oven at 180 ºC for 30-40 minutes, depending on how thick it is.

  4. Step 4

    For the frosting, blend all the ingredients in a blender until the mixture forms a thick cream (add more or less nut milk depending on the desired texture.)

  5. Step 5

    Cover the pie with a layer of frosting and decorate it with some whole walnuts.
