Blueberry pancakes

Ingredients

  • 30 g unsalted butter
  • Borges Extra Light Olive Oil for cooking the pancakes
  • 250 ml whole milk
  • 2 large eggs
  • 50 g brown sugar
  • 200 g flour
  • 10 g baking powder
  • 120 g (small) fresh blueberries

Step by step

  1. Step 1

    Mix the melted butter, milk, eggs and sugar in a bowl. Add the flour little by little, sifting it into the bowl. Add the baking powder. 

  2. Step 2

    Stir until the batter is smooth. 

  3. Step 3

    With a very hot pan drizzled with extra-light olive oil, pour in some batter until it forms a pancake of the desired size. As the first side is cooking, add a few fresh blueberries. Flip it over and cook it on the other side. 

  4. Step 4

    You can serve these pancakes with lots of different toppings: blueberry jam, Greek yogurt, chocolate shavings, banana slices, maple syrup, and so on. Let your imagination run wild!
