Two dishes of penne rigate pasta with tomato sauce and sliced pumpkin


  • 320 Borges penne
  • 1 onion
  • 2 cloves of garlic
  • 50 g Borges extra-virgin olive oil
  • 300 g tomatoes
  • 300 g pumpkin
  • Salt and pepper
  • 80 g grated Parmesan cheese

Step by step

  1. Step 1

    Cook the pasta in boiling water following the instructions on the packet.

  2. Step 2

    To make the sauce, sweat the onion and cloves of garlic in a frying pan over a medium heat with extra-virgin olive oil.

  3. Step 3

    Blanch and peel the tomatoes and cut into cubes. Add to the frying pan, followed by the pumpkin cut into small cubes. Add salt and pepper.

  4. Step 4

    Cook over a medium heat for ½ hour.

  5. Step 5

    Blend all the ingredients together in a blender and add a pinch of sugar to soften the acidity if necessary.

  6. Step 6

    Mix the sauce with the pasta, check for salt and serve with a sprinkling of grated Parmesan on top.
