Spaghetti puttanesca

Ingredients

  • 400 g spaghetti
  • 350 g crushed tomato
  • 100 g black olives
  • 4 anchovies
  • 15 g capers
  • A splash of Borges extra virgin olive oil
  • 1 garlic clove
  • 1 chilli pepper
  • 100 g grated Parmesan cheese

Step by step

  1. Step 1

    Boil the spaghetti according to the instructions.  

  2. Step 2

    Heat the garlic and chilli pepper in a frying pan with a splash of extra-virgin olive oil.  

  3. Step 3

    Add the anchovies and cook until they break down. 

  4. Step 4

    Add the crushed tomato and cook over medium-low heat for about 20 minutes. Taste the sauce and add a pinch of sugar if necessary.  

  5. Step 5

    Add the chopped black olives and capers and cook for a few more minutes.  

  6. Step 6

    Add the spaghetti, season with salt and pepper, mix well and serve topped with Parmesan cheese.
